Equipment

  • Large pot
  • Frying pan
  • Cooking spoon
  • Chopping board and knife
  • Strainer if using dried noodles

Ingredients

For the Broth

  • 4 cups beef broth
  • 1 tablespoon soy sauce
  • 1 tablespoon miso paste
  • 2 teaspoons sriracha or more if you like it spicier
  • 1 teaspoon sesame oil

For the Filling

  • 1 pound thinly sliced beef flank or sirloin works well
  • 2 packs fresh ramen noodles or substitute with dried
  • 2 cups bok choy chopped
  • 1 cup sliced mushrooms shiitake or button
  • 2 green onions sliced
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated
  • 1 tablespoon vegetable oil

Toppings (optional)

  • Soft-boiled eggs
  • Fresh cilantro
  • Chili flakes
  • Lime wedges

Instructions

Step 1: Prepare the Broth

  • In a large pot, combine the beef broth, soy sauce, miso paste, sriracha, and sesame oil. Bring to a gentle simmer over medium heat, allowing the flavors to meld together.

Step 2: Sauté the Aromatics

  • In a frying pan, heat vegetable oil over medium-high heat. Add the minced garlic and grated ginger, sizzling for about 1 minute until fragrant.
  • Tip: Keep an eye on the garlic as it can burn quickly, impacting the broth’s flavor.

Step 3: Cook the Beef

  • Add the sliced beef to the frying pan, cooking until it's browned and just cooked through, about 2-3 minutes. Transfer the beef and aromatics into the simmering broth.

Step 4: Add the Veggies

  • Stir in the bok choy and mushrooms into the broth. Let them cook for an additional 5 minutes until tender.

Step 5: Prepare the Noodles

  • In a separate pot, cook the ramen noodles according to package instructions. If using fresh noodles, they only need a couple of minutes. Drain and set aside.

Step 6: Assemble Your Ramen Bowls

  • Divide the cooked noodles into bowls. Ladle the hot beef and vegetable broth over the noodles. Garnish with sliced green onions and any additional toppings you enjoy.

Notes

Pro tips: Use high-quality beef broth for a deeper flavor. Adjust the sriracha to your spice tolerance; you can even add chili oil for extra kick. For a richer broth, simmer the base for longer if time allows.
