For the Dough
- 4 cups all-purpose flour (500 g)
- 1/2 cup sugar (100 g)
- 2 tsp active dry yeast (7 g)
- 1/2 cup warm milk (120 ml)
- 1/4 cup unsalted butter, melted (60 g)
- 2 large eggs
- 1/4 tsp salt
For the Filling
- 2 cups farmer's cheese or ricotta cheese (500 g)
- 1/3 cup powdered sugar (40 g)
- 1 tsp vanilla extract
- Zest of 1 lemon
Optional Toppings
- 1/2 cup streusel crumble (1/2 cup flour, 1/4 cup sugar, 1/4 cup butter, mixed until crumbly)
- 1/2 cup thin vanilla-lemon icing 1/2 cup powdered sugar mixed with lemon juice
Make the Dough
In a large mixing bowl, combine warm milk and yeast. Let it sit for about 5 minutes until foamy. This signals that your yeast is alive and eager to work.
Tip: Make sure the milk is warm, not hot, to protect the yeast.
Add the melted butter, sugar, eggs, and salt to the yeast mixture, whisking until well combined. Gradually mix in the flour until a soft dough forms.
First Rise
Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm area until doubled in size, about 1 hour.
Prepare the Filling
While the dough rises, prepare the sweet cheese filling. In a bowl, mix farmer's cheese, powdered sugar, vanilla extract, and lemon zest until smooth.
Tip: If you prefer a creamier texture, blend the filling in a food processor.
