Ingredients
  

For the Sauce

  • 2 medium eggplants about 1 lb / 450 g
  • 1 can crushed tomatoes 14 oz / 400 g
  • 2 garlic cloves minced
  • 1 small onion finely chopped
  • Fresh basil leaves roughly torn
  • Olive oil for drizzling
  • Salt and pepper to taste

For the Pasta

  • 12 oz pasta preferably spaghetti or penne
  • 4 oz ricotta salata grated
  • Extra fresh basil for garnish

Instructions
 

Prepare the Eggplants

  • Cut the eggplants into bite-sized cubes. Sprinkle lightly with salt and place in a colander for about 30 minutes to draw out excess moisture.
  • Tip: If time is short, you can skip this step, but salting will make a noticeable difference.

Cook the Pasta

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, typically around 8–10 minutes. Reserve a cup of pasta water before draining.

Sauté the Aromatics

  • In a large skillet, heat a generous drizzle of olive oil over medium heat. Add the chopped onion and sauté until translucent. Then, add the minced garlic and stir for about a minute to release aroma.

Add the Eggplants

  • Once the garlic is fragrant, add the drained eggplant cubes. Cook until golden and tender, about 10 minutes, stirring occasionally.
  • Tip: For enhanced flavor, roast the eggplants in the oven at 375°F (190°C) for 20 minutes before adding to the sauce.

Combine with Tomatoes

  • Pour the crushed tomatoes over the eggplants and mix well. Season with salt and pepper to taste. Allow to simmer for about 10 minutes.

Bring it all together

  • Add the cooked pasta directly into the sauce, tossing gently to combine. If needed, add reserved pasta water for a silky consistency. Stir in fresh basil just before serving.

Finish with Cheese

  • Serve the Pasta alla Norma hot, garnished with grated ricotta salata and additional basil leaves.

Pro tips: Use high-quality tomatoes for a more robust sauce. Swap in zucchini for a different texture and flavor profile. For extra creaminess, stir in a spoonful of heavy cream before serving. Add a sprinkle of red pepper flakes if you enjoy a bit of heat. Pair with a light red wine to enhance the dining experience.
