Equipment

  • Medium saucepan
  • Measuring cups and spoons
  • Stirring spoon
  • Zester or grater
  • Cooking pot for boiling

Ingredients

For the Orzo

  • 1 cup orzo pasta
  • 2 cups vegetable broth or water
  • 1 cup fresh peas (or frozen)

For the Sauce

  • 4 tablespoons unsalted butter
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley chopped, for garnishing

Instructions

Step 1: Cook the Orzo

  • In a medium saucepan, bring the vegetable broth to a boil. Add the orzo and simmer for about 8–10 minutes until al dente. The orzo should absorb the broth, creating a rich base for the sauce.
  • Tip: Stir occasionally to prevent sticking.

Step 2: Prepare the Peas

  • If using fresh peas, blanch them in boiling water for about 2 minutes, then drain and set aside. If using frozen peas, simply rinse them under warm water until thawed.

Step 3: Make the Lemon Butter Sauce

  • In a separate pan, melt the butter over medium heat. Add the lemon zest and juice, stirring well to combine. This fragrant mixture will elevate the flavors of the orzo.

Step 4: Combine and Serve

  • Once the orzo is cooked, drain any excess broth. Add the orzo and peas to the lemon butter sauce, mixing until everything is well-coated. Season with salt and pepper to taste.
  • Tip: Garnish with fresh parsley for a bright finish.
