Equipment

  • Small saucepan
  • Mixing bowl
  • Whisk
  • Measuring cups and spoons
  • Ramekins or dessert cups

Ingredients

For the Panna Cotta

  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 packet gelatin powder (2 1/4 tsp or 7 g)
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

For the Topping

  • Fresh berries (e.g., strawberries, blueberries)
  • Fruit coulis or caramel sauce (optional)

Instructions

Step 1: Bloom the Gelatin

  • In a small bowl, combine the gelatin with 1/4 cup (60 ml) of cold milk. Stir gently and let it sit for about 5 minutes until it becomes viscous and thick.

Step 2: Heat the Cream

  • In a small saucepan over medium heat, combine the heavy cream and sugar. Stir occasionally until the mixture is hot but not boiling.
  • Tip: Keep an eye on the mixture to prevent it from boiling over.

Step 3: Dissolve the Gelatin

  • Once the cream is hot, remove it from the heat and add the bloomed gelatin and vanilla extract. Whisk until the gelatin is fully dissolved.

Step 4: Pour into Ramekins

  • Carefully pour the panna cotta mixture into ramekins or dessert cups. Let them cool to room temperature before transferring them to the fridge.

Step 5: Chill

  • Refrigerate the panna cotta for at least 4 hours, or until set.

Notes

Pro tips: Use high-quality heavy cream for the best texture and flavor. Make sure the gelatin dissolves completely; any granules will affect the mouthfeel. Chill for a minimum of 4 hours to ensure a proper set.
