Ingredients
  

For the Chicken

  • 2 small chicken breasts about 10 to 12 oz / 300 to 350 g
  • 1 tbsp olive oil 15 ml
  • 1 tbsp lemon juice 15 ml
  • 1 clove garlic minced
  • 1 tsp dried oregano
  • Salt and black pepper to taste

For the Bowls

  • 1 cup cooked rice or quinoa about 180 to 200 g
  • 1/2 cucumber chopped
  • 1 cup cherry tomatoes about 150 g, halved
  • 1/4 small red onion thinly sliced
  • 1/4 cup olives about 40 g
  • 1/3 cup crumbled feta about 50 g
  • 1/4 cup tzatziki about 60 g

Instructions
 

Marinate the Chicken

  • Whisk together olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper in a mixing bowl.
  • Add the chicken breasts, coating them thoroughly with the marinade. Let them sit for at least 15 minutes to absorb those delicious flavors.
  • Tip: If you have more time, let the chicken marinate for up to 2 hours in the fridge for deeper flavor.

Cook the Chicken

  • Heat a grill pan or skillet over medium-high heat. Once hot, add the marinated chicken breasts and cook for about 6-7 minutes per side, or until they’re golden brown and cooked through.
  • Remove the chicken from the pan and let it rest for a couple of minutes. This allows the juices to redistribute, ensuring each bite is tender and juicy.

Prepare the Bowls

  • While the chicken rests, chop the cucumber, halve the cherry tomatoes, and slice the red onion.
