For the Soup Base
- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 can diced tomatoes, no salt added (14.5 oz/410 g)
- 2 cups fresh spinach, roughly chopped
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
For the Tortellini
- 12 ounces fresh or frozen cheese tortellini
For Garnish
- Grated Parmesan cheese
- Fresh parsley, chopped
Brown the Sausage
In a large pot over medium heat, add the Italian sausage. Break it apart with a wooden spoon, cooking until it’s browned and crumbled, about 5–7 minutes.
