Ingredients
  

For the Soup Base

  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 can diced tomatoes, no salt added (14.5 oz/410 g)
  • 2 cups fresh spinach, roughly chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

For the Tortellini

  • 12 ounces fresh or frozen cheese tortellini

For Garnish

  • Grated Parmesan cheese
  • Fresh parsley, chopped

Instructions
 

Brown the Sausage

  • In a large pot over medium heat, add the Italian sausage. Break it apart with a wooden spoon, cooking until it’s browned and crumbled, about 5–7 minutes.
  • Tip: Drain any excess fat if necessary for a lighter soup base.

Sauté the Vegetables

  • Add the diced onion to the pot and sauté until it's translucent, about 3 minutes. Stir in the minced garlic and cook for an additional minute.

Combine the Ingredients

  • Pour in the chicken broth, diced tomatoes, spinach, oregano, and basil. Bring the mixture to a gentle boil.

Cook the Tortellini

  • Stir in the tortellini and cook according to the package instructions, usually about 3–5 minutes for fresh tortellini.
  • Tip: Taste the broth before adding salt; the sausage can sometimes provide enough seasoning.

Serve and Enjoy

  • Once the tortellini are cooked, ladle the soup into bowls and sprinkle with grated Parmesan and chopped parsley.
