  • 1 cup white rice
  • 1/2 cup blanched almonds
  • 4 cups water

Step 1: Soak the Rice and Almonds

  • Start by rinsing the rice and soaking it with the almonds in a bowl of water for at least 4 hours, or overnight.
  • Tip: If you're short on time, a quick one-hour soak can work in a pinch, but longer is best for maximum flavor.

Step 2: Blend the Ingredients

  • After soaking, drain the rice and almonds. Combine them with 4 cups of fresh water in your blender. Blend on high until the mixture is smooth and creamy, about 1-2 minutes.

Step 3: Strain the Mixture

  • Pour the blended mixture through a fine-mesh strainer or cheesecloth into a large bowl or pitcher. Use a spatula to press out as much liquid as possible.
  • Tip: Save the leftover solids for smoothies or baking — they can add a nutty texture to various recipes!

Step 4: Flavor It Up

  • Stir in the ground cinnamon, sugar, vanilla extract, and a pinch of salt. Adjust the sweetness according to your taste, allowing it to dissolve completely.

Step 5: Chill and Serve

  • Refrigerate the horchata for at least 2 hours to let the flavors marry. Serve it in tall glasses over ice, topped with a sprinkle of cinnamon if desired.

Pro tips: For a richer flavor, use barley rice instead of regular rice. Experiment with the sweetness by using honey or agave syrup as alternatives to sugar.
