Ingredients
  

For the Rolls

  • 8 rice paper wrappers
  • 1 large avocado, sliced
  • 2 oz rice vermicelli noodles (about 60 g)
  • 1 cup lettuce, shredded (about 40 g)
  • 1/2 cucumber, cut into thin strips
  • 1 medium carrot, cut into thin strips
  • 1/2 cup fresh mint leaves (about 10 g)
  • 1/2 cup fresh cilantro (about 10 g)
  • 1/2 cup fresh basil leaves (about 10 g), optional

For the Peanut Dipping Sauce

  • 1/4 cup peanut butter (60 g)
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil
  • 1 to 2 tbsp warm water, as needed
  • 1 small garlic clove, grated
  • 1/2 tsp grated ginger, optional

Instructions
 

Cook the Noodles

  • Cook the rice vermicelli according to the package instructions, then drain and let it cool.
  • Tip: Rinse the noodles under cold water to prevent them from sticking.

Soften the Rice Paper

  • Dip one rice paper wrapper into warm water for a few seconds until it softens.

Assemble the Rolls

  • Place the wrapper on a clean surface and add a few slices of avocado, a small handful of noodles, shredded lettuce, cucumber, carrot, and fresh herbs in the center.
  • Tip: Don’t overfill; a little goes a long way in making a perfect roll!

Roll It Up

  • Fold in the sides, then roll it up tightly like a wrap. Ensure everything is snug and secure.
  • Tip: If you're struggling to seal the rolls, you can dip your fingers in water to help the edges stick together.

Repeat

  • Repeat with the remaining wrappers and filling.

Make the Dipping Sauce

  • In a mixing bowl, combine peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, grated garlic, and ginger. Stir until smooth.
  • Tip: Adjust the thickness of the sauce by adding warm water, one tablespoon at a time.
